Monday: Patatas Bravas + Pollo al Horno
55 minutes
750g Maris Piper potatoes ()or any other type that is suitable for roast or mashed potatoes), peeled and cut into bite-sized chunks
5 tbsp olive oil
1 large onion, finely chopped
3 cloves garlic, crushed
400g tin finely chopped tomatoes
3 vine tomatoes, chopped
½ tsp dried chilli flakes
1 tbsp sherry vinegar
1 tsp caster sugar
½ tsp sweet smoked paprika
finely chopped flat-leaf parsley, to serve
600-800g (1.3 – 1.8 lb) of chicken thigh or drumsticks (bone-in)
1 onion, sliced
1 head of garlic (around 12-15 cloves)
¼ cup (60ml) sweet Spanish Sherry (Pedro Ximénez)
2 tablespoons of Extra virgin olive oil
2 tablespoons of butter
2 sprigs of fresh rosemary
1 tablespoon of Dried Oregano
1 teaspoon of sweet smoked paprika
1 teaspoon of hot smoked paprika
1 teaspoon of ground cumin
½ teaspoon of coarse sea salt
Cracked black pepper (to taste)
Tuesday: Gazpacho (cold soup)

2 pounds ripe Roma tomatoes, halved and cored
1 small (1/2 lb) cucumber, peeled and seeded
1 medium green bell pepper, cored
1/2 small red onion, peeled
2 small garlic cloves (or 1 large clove), peeled
3 tablespoons olive oil
2 tablespoons sherry vinegar
1 teaspoon fine sea salt
1/2 teaspoon freshly-cracked black pepper
1/2 teaspoon ground cumin
1 thick slice of white bread, soaked, crusts removed
optional garnishes: homemade croutons, chopped fresh herbs, a drizzle of olive oil, or any leftover chopped gazpacho ingredients
Wednesday: Spanish Tortilla (Tortilla De Patatas)

2 lbs (900g) waxy potatoes such as Yukon Gold or red
8 large eggs at room temperature
1 large white onion
Thursday: Quick Prawn Paella
25 minutes
2 onions, finely chopped
2 red peppers, sliced
2 cloves garlic, chopped
300g paella rice, or long grain rice
a large pinch saffron
a large pinch smoked paprika
800ml chicken stock
300g large cooked prawns, shell on or off
200g frozen peas, defrosted
a small bunch parsley, chopped
lemon wedges, to serve
Friday: One-pot Spanish Cod
40 minutes
4 chunky cod fillets (you could use haddock or pollock if you prefer)
200g diced cooking chorizo
1 pinch saffron threads
2 large glasses (300ml) white wine
500ml chunky passata
1 tsp smoked paprika
2 cans chickpeas, drained and rinsed
2 large red onion, finely diced
4 cloves garlic, minced
500ml chicken stock
Juice of 4 juicy lemons
4 tsp sugar
Fresh flat leaf parsley
Fresh artisan bread to serve
